There are three pots of maple sap on the stove boiling off as I type these keys. We tapped the sugar maple out front and two of the maples around the corner at the Shaw's house. We didn't bother with it the past two years but decided to give it another go this time around. The ratio is 40 to 1. 40 gallons of sap yields one gallon of maple syrup. That is a whole lot of steam in the house so we put a box fan in the window next to the stove and keep the kitchen door open and another open window as well. We will end up with something like three quarts when we are all done so it is a little operation but still gets us in the game.
I have sometimes thought it would be really cool if our neighborhood could have a real sugar house with an evaporator and we could tap all the trees on the block and end up with not only a whole bunch of syrup better friendships to boot. Maple is the most common tree in our neighborhood and they are just waiting to yeild there sap for a urban sugar bush collective.
